the Company I was born, raised, live and work in Gaeta, a land of fishermen and farmers, located on the southern border of Lazio at the gates of Campania. I learned the art of pastry making first from my grandfather when I was a child, then, from my father who handed over the whole "job" to me and from whom I received the recipe books: his and my grandfather's. The specialties that I am proud to replicate every day with absolute fidelity are therefore preparations of grandfather Giovanni and father Cosmo. Cakes, biscuits or pastries, what I offer is always characterized by constant research aimed at maintaining the authenticity of the flavors and ingredients: every time I bake a dough I close my eyes, inhale deeply, and I feel small again. What I produce is therefore based on recipes typical of the hybrid tradition of a land that has its feet in the sea and its head in the Agro-Pontine hill; if the right hand caresses Vesuvius, the left hand can almost graze the Roman hills. All this allows me to blend different flavours, rich in nuances and with great evocative capacity: arabesque blends of spices, orange blossom water , the carefully selected natural extracts and essences, the eggs, the rich and tasty butter from our pastures are some of the ingredients that make my entire production captivating and its tasting memorable.
