From the beginning we have chosen to operate in an environmentally friendly, practicing integrated pest management and to use the minimum pesticide products.
In 2001 we completed the construction of the cellar: the first floor is the place destined for withering of the grapes while on the ground floor warehouse and the area in the future for bottling; outside, under a canopy, winemakers are of modern design for fermentation and cellar in the basement of the processing and storage, with steel tanks, and, in two brick vaults, the private cellar aging, with barrels and barrels.
Respect for tradition and typicality of the wines are and will always be for us a fundamental value: ignoring fashions, we aim to make the most of native vines, the land and the work of the winemaker, so that our wines will be the expression complete and sincere.
Valpolicella, but certainly also in other territories, land, labor and wine are bound together by a bond very old and entrenched that took and takes characters, aspects, always new reasons to be built from time to time, from generation to generation, combining experience and reason, tradition and creativity.
Here the land is not enough to cultivate, you have to shape it, sculpt it in terraces and embankments, to stem it dry walls, to be outlined according to the slope, exposure.
The dry walls (marogne) were born, in time, almost alone, by the accumulation of rocks from which, day by day, it freed the field: an obstruction, the stones, the ability of farmers has turned in resource and aesthetic value. The marogne are in fact today a monument to the sense of proportion and the ecological expertise of our old: preserve and enhance them helps not to lose the last remnants contacts with a tradition that has been built over the centuries, building on experience and their efforts to govern throughout the country, to get the best out without destroying the vital flow.
In these few words is contained the philosophy that since 1992 leads the brothers Stephen and Pier Paolo Antolini in the production of wines of Valpolicella, Amarone, Recioto, Ripasso Classico Superiore and from the herd of the vineyard, conducted in person and without the use of chemical insecticides and herbicides, preferring alternative techniques such as mating disruption and mechanical weeding.
If you respect the land, they identify and enhance the values and that's what brothers do with their wines Antolini, who speak with clarity and directness of the Valpolicella Classico, land historically suited to viticulture.
If you listen to the story that is Pier Paolo of his creations, he immediately feels the passion that guides him in his craft, a bit 'entrepreneur, a little' winemaker and a little 'farmer, and tenacity that drives his brother Stephen in protect every element of their lands, even the "marogne", the traditional stone walls that for centuries allow to cultivate the slopes and prevent the washing away of the land but which require ongoing management and nothing short of exhausting.
Walking through the rows of vines Antolini, all located in the hills, between 150 and 350 meters above sea level, in the towns of historical Valpolicella Marano, Negrar and San Pietro and the ground mainly consists of clay, which gives the vines the right humidity without 'use of irrigation systems, you will experience the time, history and culture of the Valpolicella country and takes home, narrow in the middle, a portrait of this area of the Veronese, producing wine since Roman times.
The vineyard "Moròpio" (45 ° 33 '05''N, 10 ° 55' 13 '' E) is located in the municipality of Marano di Valpolicella, to about 350 m above sea level and south-east. The system of adopted breeding is the traditional double pergola with many rows planted on "marogne", in coexistence with olive and cherry trees.
