I am Luciano Catellani and together with my family and a few breeders in the early 80s I took charge of the fate of the ancient Reggiana breed, the Red Cows which were about to disappear forever. I know this one history for having experienced it firsthand, for the sacrifices made, for the time spent searching for the last remaining specimens in the small stables on the plains and mountains; I know those who laughed at us then because they were considered "ancient" and not in step with the times but also those who helped us, starting with some people from my small town of Cavriago located in the heart of the Parmigiano Reggiano area, I know and thank those who has helped at provincial, regional and national levels. A thirty-year history on which a book could be written, a history of hard battles fought to save this magnificent breed, to give it back its rightful place in the time in which we live, to enhance its breeders but also to guarantee consumers and admirers of the quality of its products. We Vacche Rosse breeders have given ourselves very restrictive regulations in respect of the animals, in the search for the highest quality and for the protection of our loyal customers. In fact, in 1991 a Consortium was born for the promotion of the products of the Antica Razza Reggiana (C.V.P.A.R.R) of which I was president until 2012. At a national level we were the first to link its product to the breed, in times in which he only looked at high productions and not at quality and for this we received acclaim all over the world. We are proud and happy because our example has served to give impetus to many other small local productions both in Italy and abroad. Today I present to you our new story, with my family, in particular Laura and Manuel and my close collaborators free from any consortium constraints. A story made of men and animals, of innovation, and of deep respect for my roots and for my traditions that have brought me this far.
