Golden yellow in appearance with bright green reflections, Primaluce is characterized by an intense and persistent aroma on the nose with marked notes of green tomato, hints of artichoke and freshly cut grass. On the palate it is delicate with a pleasantly bitter and spicy note. It is best appreciated raw on white meats, salads and fish.The olives are harvested by hand to maintain their integrity during the veraison period, or when they begin to change color. The olives just arrived at the mill are washed thoroughly with fresh water. The olives are crushed by means of hammer crushers to obtain the olive paste which is stirred through a slow and continuous process that allows the splitting of the oil particles from those of the water. The temperature is always kept constant, never exceeding 27 °, in order to obtain an excellent ""cold extracted"" Extra Virgin Olive Oil with extraordinary organoleptic characteristics, finally the oil passes through a separator that divides it from the rest water particles. After the natural settling process which lasts about 2 months, the unfiltered oil is packaged in various formats (Tin and Glass) and marketed.A company that was born almost half a century ago, in 1970, from an intuition and foresight of Messrs. Diego and Raffaella Mallia. He had been an oil dealer since he was young and, when he thought the times were ripe, he decided to create his own oil mill.
