USEFUL TOOLS: Chemex with paper filter Coffee grinder Scale Timer Water kettle Ingredients for 2 cups: Approximately 30 g of coffee (60 g of coffee per 1 liter of water) 500 ml of water at 92°-96°C. Procedure: 1 - First insert the paper filter into the opening of the coffee maker and wet it with hot water using the gooseneck kettle. This will help eliminate the papery smell and heat the Chemex coffee maker itself. Remember to remove the water used in this process from the jug. 2 - Weigh the quantity of coffee to be used and, after grinding it, pour it into the filter and level it. 3 - Now add the water. Pour a first part of water at 92° –96°C using a circular motion, until all the ground coffee is wet. The so-called "blooming", or pre-infusion, now begins. 4 - After about 30 seconds, add the remaining water until you reach a total of 500 ml. 5 - Wait for it to finish percolation, remove the filter, serve the coffee and enjoy every single sip.
