The grapes for this wine are carefully selected by hand, collecting only the golden bunches. The soft pressing allows extraction of crunchy green apple and citrus fruits. Only free-run must is used for this wine. The fermentation phase takes place in stainless steel tanks at controlled temperatures (very cool at around 12C). The fermentation is interrupted very early, obtaining a low alcohol content with residual sugar and acidity in line with this style. Delicate aromas of green apple, pear, nashi and lime. On the palate it evokes green 'Granny Smith' apples, a dominant character with a pronounced minerality, reminiscent of river stone.
