"The Bonati family has been a family of farmers and breeders for 4 generations and runs a farm in the Parma countryside. Today they have around 100 cows that produce milk which they transform into Parmigiano Reggiano in the dairy and subsequently mature the product in a warehouse of maturing. Theirs is in fact a complete cycle company: from the food for the animals, to the milk they produce, to the transformation into cheese up to the sale, everything managed by them. The cows mainly eat hay from stable, century-old meadows which contain herbs and essences unknown and unobtainable in more recently sown meadows. The particular richness of this hay gives the milk and therefore the cheese exclusive aromas. The entire processing cycle is strictly artisanal and this allows us to obtain a high quality product, followed in every minimum detail with precision and scruple, in order to achieve perfect traceability. When Parmigiano Reggiano Bonat reaches 2 years of maturation it is requalified by experts from the Protection Consortium and only the exceptional and correctly ripened wheels are marked with the second mark " "EXTRA"" and at this point only the best reaches 3 years or even 4-5-6-7-10 years of maturation. Their Parmigiano Reggiano becomes a cheese with extraordinary qualities, awarded in numerous international competitions. It is also sought after by the best restaurants in Italy and around the world, such as the AIMO and NADIA Restaurant in Milan, the ENOTECA PINCHIORRI in Florence, Fromagerie Laurent Dubois Meilleur Ouvrier de France, Le Coque d'Or in Tokyo, the Four Seasons in Los Angeles, in ITALY of Singapore, CAVES WENGLER of Luxembourg."
