We use circular bronze dies and dry the pasta at temperatures below 44°C, taking about 20 hours for short pasta and about 40 hours for long pasta. The linguine are 260mm long and have an elliptical section 4.4mm wide and 1.36mm thick. Cooking time is 7-9 minutes.
