Pâté and Mushy

The liver pâté is an undisputed delicacy of the great French cuisine, but boasts ancient origins, in fact the goose liver pâté was already known by the Egyptians in the era of the pharaohs. In a fresco of 2500 a.C. discovered in Sakkarah, there is depicted the scene in which six Egyptians are busy hogging geese; this custom was also common among the ancient Romans, who prepared it by mixing it with a mixture of crushed dried figs, milk and honey. Over time, the foie gras finds its greatest splendor among the royals of France, in particular with Louis XV and Louis XVI. In France, pâté de foie gras (fatty liver) is mainly prepared with goose liver (and duck), gorging this animal up to 10 times its normal size (hence its name).
