Our pasta from the turanic grain line is produced with turanic wheat (Triticum turgidum subspecies turanicum, commonly T. turanicum) coming from certified organic farming. This species is native to the Khorasan region (North-East of Iran) and is also present in Italy, but has been forgotten in modern times. Since 2013 our company, in collaboration with the Prometeo Company of Urbino and the agronomist Oriana Porfiri, has begun to develop pasta-making methodologies and tools to best interpret the richness of these grains, rediscovered and cultivated by Prometeo himself. We use circular bronze dies and dry the pasta at temperatures below 44°C, taking about 20 hours for short pasta and about 40 hours for long pasta. The result obtained from the union of this semolina and water is a pasta with the color of the earth and the strong smell of wheat. The Sedani 20 rows of Turanian wheat are characterized by double striping: in fact there are 10 internal rows and 10 internal rows. They are 40mm long and 7mm wide and the cooking time is 5-7 minutes.
