Whoever says Nocciolini says Chivasso: the specialty is in fact the prerogative of this town in the province of Turin. These sweets had already been produced since the beginning of the nineteenth century, and were called Nuasèt, from the French noisette, hazelnut. The recipe consists of only three ingredients, but its difficulty lies in the wisdom of the mixture and the processing times. First of all you need hazelnuts, strictly Piedmont hazelnuts: shelled and toasted to perfection; then sugar and whipped egg whites are added. The mixture is brought to a "percolating" density and then immersed in a special pouring machine which drips small drops of mixture onto sheets of special straw paper.
