Alto Adige speck (in German: Sà¼dtiroler Markenspeck or Sà¼dtiroler Speck) is an Italian specialty of South Tyrolean delicatessen. Speck is obtained from a completely boned pork leg which, unlike the preparation of raw ham, is opened and pulled, lightly salted and flavoured, and finally smoked.
