- 24 Months: recommended in combination with structured red wines, excellent if presented cut into petals in a fruit salad dressed with Traditional Balsamic Vinegar or with any type of dried fruit such as walnuts, hazelnuts, figs.
- 30 Months: can be paired with a sparkling white wine or with a Prosecco Superiore, excellent in combination with Traditional Balsamic Vinegar and fruit compotes.
- 40 Months: ideal in combination with a Franciacorta Blanc de Blancs or with a structured Ripasso della Valpolicella, indispensable with Traditional Balsamic Vinegar, wildflower honey or in a salad with fresh porcini mushrooms.
Parmigiano Reggiano DOP delle Vacche Rosse is the cheese which is obtained from the milk of Razza Reggiana cows, famous and appreciated throughout the world, can only be branded with this name after a minimum of 24 months of maturation. With a sweet, delicate and persistent flavour, it is recommended not only for its taste but also for its exceptional nutritional properties, it is ideal for the elderly and adolescents due to its high calcium content and is suitable for athletes thanks to its excellent levels of proteins, lipids, mineral salts and vitamins.
