Mancini pasta is produced with durum wheat grown directly by the company. The only ingredients used are semolina and water. The pasta factory uses circular bronze dies and dries the pasta at temperatures below 44°C, taking approximately 30 hours for short pasta and approximately 40 hours for long pasta.
