It was founded in Trieste in 1933 by Francesco Illy born in 1892 in Temesvár, Austria-Hungary (now Timi?oara, Romania). The history of the company is linked to the life of the family of its founder, who started an entrepreneurial activity in the cocoa and coffee sector and then decided to dedicate himself exclusively to "black", as espresso coffee at the bar is called in Trieste . In 1934 he invented and patented the "inert gas pressurization" packaging system for preserving the coffee aromas inside the jar. In 1935 he filed the engineering patent for Illetta, illy's professional espresso machine.
