Genoese pesto is the condiment par excellence of the Ligurian tradition .
Its recipe is simple and precious at the same time: it is a raw sauce that preserves all the flavor of its ingredients. It is obtained by crushing Genoese basil, pine nuts and garlic, all seasoned with Grana Padano, Parmigiano Reggiano, Pecorino and olive oil.
The first example of pesto dates back to Roman times, while the first official recipe dates back to the nineteenth century, although it certainly draws inspiration from older sauces already widespread in Liguria during the Genoese maritime republic.
How to use: Ready-made condiment for pasta, also suitable as an aperitif served on toasted bread and finger food.
