Muscular portion of the pig's neck, adhering to the cervical and part of the thoracic vertebrae. Meat coming from slaughterhouses and/or cutting plants recognized under the PGI system for the production of Coppa di Parma. At the end of maturation, cut in half and vacuum packaged.
