Description

Coppa is a sausage that is present in Italy with various interpretations and recipes, obtained by processing the upper portion of the pig's neck and part of the shoulder (this justifies its name). The meat is salted and massaged (this operation is necessary to favor both the penetration and the uniform distribution of the salt) then they are stuffed into a natural casing and left to mature. During processing, spices and aromatic herbs typical of the different production locations of the cured meat are added. In the past, for its seasoning, the meat was wrapped in raw cloth or tied with hemp twine. Quality products.
