Description

The ""Bellota 100% Iberico Pata Negra"" ham shoulder comes from animals that are more than 18 months old and weigh 160 kilos. Once the salting period has passed, the shoulders are transferred first to the dryers and finally to the cellars. Maturing takes a total of 24 months, during which the shoulders undergo natural transformations and form the characteristic aromatic compounds. ""Pata Negra"", synonymous with genetic authenticity, and ""caña fina"" are two distinctive traits of 100% Iberian Navarretinto ham. Among their many attributes, the "flavor" (combination of smell, flavor and texture), the shiny lean meat and the smoothness of the fat are unmistakable traits that generate a series of sensorial perceptions when tasting the ham and which enhance the its unparalleled scent.
