Description
The Lomo ""Bellota 100% Iberico Pata Negra"" with a weight at the end of maturation between 1,000 and 1,350 grams, is made from fresh pieces ranging from approximately 2,000 to 2,500 grams. The ingredients of its ""traditional preparation"" are 100% Iberian pork loin, sea salt, La Vera paprika, extra virgin olive oil, garlic, oregano and preservatives (E-250 and E-252). Once the process is completed in conditions of slow and sweet maturation, with a final reduction of 44%, a product with a typical veined appearance with marked juiciness and a pronounced "flavor" is obtained. It is recommended to remove the vacuum bag and leave it in a cool, dry place, without slicing, 24 hours before starting consumption. As a general criterion, the thickness of the slices can be 2 mm.
