Description

Product made with thighs selected for fat content, weight and quality of the meat. The meat comes from slaughterhouses subject to self-control in accordance with EC regulation 852/2004. After deboning, the thigh is cut into the typical speck shape (baffa) and then dry salted with the addition of typical spices and additives. Salting lasts about a month, then the speck is smoked in the traditional way using exclusively non-resinous woods. Maturing lasts a minimum of four months, during which the product is kept in maturing cells at controlled temperatures and humidity. At the end of maturation, the speck is cleaned from the thin layer of mold (from the same family that characterizes some cheeses) that has formed on the surface of the product, cut in half, labeled and vacuum packaged.
