Description
Spelled is one of the oldest cereals, of medieval origin. Cultivated in Italy, after harvest the spelled is hulled and then pearled to make it more digestible.

HOW TO PREPARE:
Rinse the spelled under cold water, put it in a pan with 750 ml of water for every 100 g of spelled. Cover with a lid, bring to a boil and simmer for 25-30 minutes. Add salt after cooking to prevent it from hardening. Drain and season to taste. Ideal for soups and salads.
