Description
Minor muscular part of the hind limbs of the pig, left with a small ossicle (internal end of the patella), sectioned starting 4-5 cm above the femoro-tibio-patellar joint and passing adherent to the femur for its entire length; it is left with the rind on its entire external part. Thighs from the Po Valley national adult pig circuit. At the end of maturation it is cut in half and vacuum packaged.
