E 'was invented by Riccardo Rossi of Rossi Salumificio - Ca' di Parma Srl that has always exclusively produced and launched on the market, but they can not legally patent the production decided to invent this brand of fantasy "Culaccia ®" in fact, to differentiate themselves and stand out. The Culaccia ® is therefore an exclusive product of Salumificio Rossi and as such is produced. In fact it is one of the few meats without preservatives, are used only for the production of pig thighs adult national ones used for the production of hams protected by the consortia in Italy. The Culaccia ® is the best part of the ham, the most valuable, boneless, without stem and without bow (the little drumstick-shaped shell -anchetta gergo- in fact is left to recognize that part of the ham). It 'worked and cured in a very natural way, it is not bagged, or manipulated. It makes little difference and its shape allows you to make slices are always the same from beginning to end. And 'soft as ham, sweet and mellow as the Culatello.
